Trying to lose weight is the story of my life and I am constantly on the look out for some yummy low carb, gluten free recipes. Thanks to Julia Child and pinterest where I found this recipe and was totally blown away by it. It was YUM! And so HEALTHY!
So, you need
1 big aubergine sliced (about 1/4 inch thickness)
2 to 3 tbsp of chopped garlic
italian dressing/ oregano
handful of chopped basil leaves
2- 3 tbsp oil
Salt and pepper to taste
grated parmesan and mozarella cheese (this is not vegan but I was happy with what was available at the stores)
about 6 tomatoes
1 small bowl of pomegranate and A few figs (my own addition)
Sprinkle salt over the slices and let them sit on kitchen paper towels for about 20 minutes. You can start making the sauce while the slices dry. Cook garlic in the oil (preferably olive oil), add in the chopped tomatoes and italian seasoning. Add a little bit of salt (be careful as the slices have enough salt). Add a tablespoon of water if it look too dry. Let the mixture simmer.
Going back to the aubergine slices, you will notice that the paper towels turn wet with all the water from the slices. Wipe them with dry towels on the other side as well to make them fully dry.
Using a brush grease your baking tray and spread the oil on the slices. Sprinkle salt, pepper and italian dressing on the slices and bake them at 180 degrees in your oven for 10 to 15 minutes. Keep checking as they should’nt become too soft.
Get them out from the over and spread the sauce and some shopped basil leaves over each of them. Generously, top with the mix of parmesan and mozarella cheese. Shove the aubergine in the oven again at the same temperature. This time just for 10 mins for the cheese to melt and settle on the slices.
Additionally, to get in a little sweet flavour I gave my own twist to this recipe. I cut some figs (medium sized chunks) and tossed them in a non stick pan with very little brown sugar. This is my fig sauce.
While serving, spread a little fig sauce around the plate and place the mini pizza. Sprinkle a little pomegranate on top. YUMMMM!
